Hello everyone! For seafood lovers, I'd like to share a crispy and fragrant Thai-style Tom Yum flavored fried shrimp recipe.

Ingredients

  • 1 kilogram of shrimp
  • 2 spoons of Tom Yum paste
  • 1 piece of ginger
  • 2 stalks of lemongrass
  • 3 fresh green chilies
  • 3 kaffir lime leaves
  • 1 spoon of oyster sauce
  • 1 spoon of tomato sauce paste
  • 1 egg
  • 1 spoon of corn starch
  • 3 spoons of chili paste
  • 2 spoons of vinegar
  • A pinch of salt
  • 1 spoon of honey
  • 1 spoon of sugar
  • About 1 and a half spoons of margarine
  • Water
  • Cooking oil

Step-by-step instructions

(1) First, wash the shrimp thoroughly and trim off the antennae from the head using scissors. Then place the shrimp into a bowl, mix with oyster sauce, corn starch, egg, and a pinch of salt, and let it marinate for about 15 minutes.

(2) Once the marinating time is up, heat oil in a pot to deep-fry the shrimp. Since the shrimp will be deep-fried, pour in enough oil to fully submerge the shrimp. Once the oil is hot, add all the marinated shrimp and fry until golden brown. Remove the fried shrimp and place them on a strainer or oil-absorbing paper to drain the excess oil.

(3) Next, add about 1 spoon of cooking oil to another pot and heat it up. Once the oil is hot, add the finely sliced ginger, lemongrass, and green chilies, and fry until fragrant. Then add the Tom Yum paste, chili paste, sugar, vinegar, tomato sauce paste, honey, and a little water, and stir-fry for about 2 minutes. After that, add a bit more salt and mix well.

(4) Once done, add all the drained fried shrimp into the Tom Yum paste and stir continuously until well combined. Stir well for another 2 minutes to let the flavor soak into the shrimp, then turn off the heat. Even after turning off the heat, using the remaining heat of the pot, mix in about 1 and a half spoons of margarine and stir until fragrant. Then transfer to a plate and sprinkle thinly sliced kaffir lime leaves on top — and your delicious Thai-style Tom Yum flavored fried shrimp is ready to enjoy!
