Hello everyone! I'd like to share a delicious and nutritious roasted chicken recipe. With its subtle lemongrass aroma and tender texture, this is a dish that both adults and children will love, so please try making it at home.
Ingredients
- 1 chicken, about 750 grams
- 9 stalks of lemongrass
- 2 bunches of coriander
- 5 cloves of garlic
- 1 knob of ginger
- 1 lime
- 1 tablespoon fish sauce
- 1 tablespoon cornstarch
- 1 tablespoon chili powder
- 1 tablespoon sugar
- A little salt
- 1 tablespoon sugar
- Water
Step-by-Step Instructions
(1) Wash the whole chicken clean and remove all the internal organs. Then, thinly slice the ginger and garlic. In a bowl, mix the thinly sliced ginger and garlic with a little salt, sugar, a piece of lime, clear fish sauce, chili powder, and coriander, and stir well.
(2) Rub the resulting sauce all over the whole chicken so that the flavor is absorbed throughout. Once you've thoroughly rubbed the chicken all over, stuff the remaining sauce into the chicken's cavity. Then, marinate it in the refrigerator for about 2 hours.
(3) When the time is up, take a heat-resistant roasting pan for baking. Spread about 3 stalks of lemongrass flat on the pan. Place the marinated chicken on top of the spread-out lemongrass. Then, bake it in the oven or a steaming pot over low heat for about 45 minutes.
(4) Once the chicken has roasted for about 45 minutes, remove the chicken and strain out the flavorful liquid released from roasting. Then, in a pot, add a little of the roasting liquid along with sugar, fish sauce, salt, chili powder, and cornstarch, and simmer over low heat.
(5) While the roasting liquid is simmering, cut the roasted chicken into pieces of your preferred size. Once the sauce you were simmering earlier has thickened, turn off the heat and slowly drizzle it over the chicken pieces. And there you have it — a delicious, tender whole roasted chicken with a wonderful fragrant lemongrass aroma!
