Hello everyone! For those who love satay, among the many ways to make satay, I'd like to share an easy recipe for chicken satay that tastes just like what you'd buy at a restaurant.

Ingredients

  • Chicken - 1 kg
  • Shallots - 3
  • Cucumber - 1
  • Peanut butter - 200 grams
  • Coconut milk - 400 grams
  • Garlic - 4 cloves
  • Fish sauce - 2 spoons
  • Lemongrass - 2 stalks
  • Ginger - 1 piece
  • Turmeric powder - half a spoon
  • Chili paste - 4 spoons
  • Salt - a little
  • Curry powder - 1 spoon
  • Brown sugar - 1 spoon
  • Lime - 1
  • Bamboo skewers - 10 sticks
  • Oil

Step-by-step instructions

(1) First, wash the chicken thoroughly and remove the bones. Then cut it into small cubes about 3 centimeters in size. Put the chicken cubes into a bowl, add a piece of lime and a little curry powder, and massage them evenly. Next, grind sugar, turmeric powder, lemongrass, curry powder, ginger, garlic, and a little oil together in a grinder. Mix the resulting paste with the chicken pieces and marinate in the refrigerator for at least 2 hours.

(2) The bamboo skewers to be used for grilling the chicken should also be soaked in water for at least an hour beforehand. While the chicken is marinating, prepare the dipping sauce to go along with it. For the sauce, first mix chili paste, peanut butter, sugar, a little salt, fish sauce, and a piece of lime in a bowl and stir well. Then pour coconut milk into a pot and heat it over low heat.

(3) Once the coconut milk comes to a boil, pour it into the mixed sauce paste. You can adjust the sourness, spiciness, and saltiness to your own taste by adding more as needed. The final step is to grill the chicken. You can grill it using either a grill stove or a charcoal stove, whichever you prefer. First, thread the marinated chicken cubes onto the bamboo skewers.

(4) Once all the chicken cubes are skewered and ready for grilling, brush the chicken satay skewers with a little cooking oil using a kitchen brush, then grill them. Turn them from side to side for about 3 minutes, and once they smell fragrant and the meat is cooked through, you can remove them from the heat. Grill the remaining satay skewers in the same way. Then, slice the cucumber into pieces of moderate thickness to go along with the prepared sauce and the grilled satay, and enjoy this delicious chicken satay!
