Hello everyone! This time, I'd like to share a recipe for Chinese-style mushroom chicken claypot rice, which is extremely popular in Singapore and Malaysia.
Ingredients
- 2 chicken drumsticks
- 2 cans of evaporated milk
- 4 dried mushrooms
- 1 Chinese sausage (lap cheong)
- 4 cloves garlic
- 4 small shallots
- 1 stalk spring onion
- 1 knob ginger
- 2 tablespoons oyster sauce
- 2 tablespoons light soy sauce
- 2 tablespoons dark soy sauce
- A pinch of chili powder
- 1 tablespoon cornstarch
- 1 tablespoon sugar
- 2 tablespoons cooking wine
- 1 tablespoon sesame oil
- 4 tablespoons cooking oil
- Water
Step-by-step instructions
(1) Wash the chicken drumsticks thoroughly and debone them. Then cut into bite-sized pieces. Next, in a bowl, combine the chicken with garlic, ginger, light soy sauce, chili powder, cooking wine, sugar, and oyster sauce, and knead well until evenly mixed. After kneading, let it marinate for about 1 hour. While the chicken is marinating, soak the 2 cans' worth of rice in water for about half an hour. Once the half hour is up, drain the soaked rice in a strainer.
(2) Next, add a little water to a claypot and heat it over medium heat. Once the water comes to a boil, add the drained rice and cook for about 5 minutes. Then add the mushrooms, cut into medium-sized pieces, into the claypot with the cooking rice and continue cooking for another 3 minutes. After that, add thinly sliced shallot rings into the claypot with the rice.
(3) Once the rice is fully cooked and the chicken has marinated for about 1 hour, add the chicken pieces into the claypot and let it cook further over low heat for about 15 minutes. Meanwhile, in another pan, add a little cooking oil and fry the thinly sliced shallot rings until crispy and golden brown.
(4) Once done, remove the fried shallots and drain the oil. When the rice and chicken are both cooked, add a little dark soy sauce, a tablespoon of sesame oil, and the fried shallots into the claypot and mix thoroughly. Now, the flavorful mushroom chicken claypot rice, with the sweetness of the chicken and the fragrant aroma of mushrooms, is ready to be served, garnished with a little spring onion.
