If you have leftover rice from the night before, you can fry it up with kimchi for breakfast.
For the kimchi fried rice, you'll need:
- 1 cup of kimchi (cut into small pieces)
- 150 grams dried pork (bacon/ham)
- 200 grams enoki mushrooms (washed and roots removed)
- 4 full bowls of rice
- 1 half-fried egg
- 1/2 teaspoon garlic
- 8 tablespoons kimchi juice
- 1/2 teaspoon sesame oil
- 1 tablespoon oil
- 1 teaspoon toasted sesame seeds
- 1 stalk spring onion (thinly sliced)
- Seaweed, thinly sliced
Method
Heat a wok or pan over medium heat. Add oil and spread it evenly. Stir-fry the garlic for about 10 minutes. Add the dried pork and fry.
Add the kimchi and stir-fry until almost cooked. Add the mushrooms and fry.
Add the rice and kimchi juice, and stir-fry.
Add the sesame oil, mix well, and remove from the heat. Transfer the kimchi fried rice to a plate and garnish with sesame seeds, spring onion, and a few pieces of seaweed. Top with the fried egg. Now your delicious kimchi fried rice is ready to eat!
