Ingredients
- Sichuan peppercorn seeds - 3 tablespoons
- Chicken - 8 oz
- Cooking oil - 3 tablespoons
- Bell pepper - 1 piece
- Spring onion - 1 stalk (thinly sliced)
- Garlic - 2 cloves (finely chopped)
- Ginger - 1 piece (finely chopped)
- Dried chili peppers - 2 pieces
- Corn starch - 1 tablespoon
Seasonings needed for marinating the chicken
- Cooking wine - 1 teaspoon
- Salt - 1 teaspoon
- Egg white - 1 piece
- Corn starch - 2 teaspoons
Sauce needed for stir-frying
- Cooking wine - 1 teaspoon
- Sesame oil - 1 teaspoon
- Salt - 1 teaspoon
- Clear fish sauce - half a tablespoon
- Corn starch - 1 teaspoon
Step-by-step instructions
1. Cut the chicken into pieces about 2 centimeters square. Then place it in a bowl, add 1 teaspoon cooking wine, 1 teaspoon salt, the egg white, and 2 teaspoons of corn starch, and mix thoroughly.
2. In a small bowl, mix together 1 teaspoon cooking wine, sesame oil, salt, clear fish sauce, and corn starch until well combined.
3. Heat a pot and add oil. Once the oil is hot, add 1 tablespoon of corn starch to the bowl of chicken and mix well. Then put it into the hot oil and fry until the chicken becomes firm.
If there's a lot of oil left in the pot, scoop it out into a small bowl, leaving only about half a tablespoon of oil in the pot.
4. Next, add the dried chili peppers and Sichuan peppercorn seeds into the hot oil and stir until fragrant. Then add the garlic, ginger, and spring onion and stir-fry together.
5. Once done, put the previously fried chicken pieces back in. Then pour in the sauce prepared in step (2) and stir-fry thoroughly until well mixed.
After tasting and adjusting the seasoning lightly, you'll have a deliciously spicy chicken stir-fry ready to enjoy.
