Ingredients

  • 900 grams fish fillet
  • 112 grams corn flour and 1.5 tablespoons
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1 piece ginger (thinly sliced into strips)

  • 4 cloves garlic (finely chopped)
  • 2 tablespoons cooking wine
  • 125 milliliters rice vinegar
  • 5 tablespoons sugar
  • 4 tablespoons water
  • Cooking oil
  • 1 bell pepper (thinly sliced)
  • 1 onion (thinly sliced)

Step-by-step instructions

1. Place the fish fillets on a large tray and coat them evenly with 112 grams of corn flour, 1 teaspoon of salt, and ground pepper. Then score the fish fillets with a knife.

2. In a large bowl, mix together ginger, garlic, cooking wine, fish sauce, rice vinegar, sugar, water, and 1.5 tablespoons of corn flour until well combined.

3. Heat a pot and add oil. Once the oil is hot, add the fish fillets one by one and fry. After frying for about 2-3 minutes, flip to the other side and fry for another 2-3 minutes.

4. Once fried, transfer the fish to another fresh tray.

5. Next, heat a new pot and add 1 tablespoon of oil. Once the oil is hot, add the ginger and garlic, and stir-fry until fragrant. Then add the onion and stir until well combined. Next, pour in the garlic sauce prepared in step (2) into the pot. Let it simmer until it comes to a boil.

6. Once it's boiling and the sauce has thickened, add the bell peppers and stir.

7. Pour the resulting sauce over the fried fish. Now you have delicious sweet and sour fried fish ready to serve.
