Ingredients
- 20 shiitake mushrooms
- 2 liters of water
- 4 dried jujubes (red dates)
- About 4 pounds of chicken (cut into medium-sized pieces)
- 1 tablespoon oil
- 5 slices of ginger
- 5 tablespoons Chinese cooking wine
- A little salt
- 1 stalk spring onion (thinly sliced)
Step-by-step instructions
1. Wash the mushrooms and soak them overnight in a soup pot filled with 2 liters of water.
2. Once soaked, slice the mushrooms thinly. Then put them back into the soup pot.
3. Add the jujubes to the soup pot and bring to a rolling boil over high heat. Once boiling, lower the heat to the lowest setting.
4. While the soup is simmering gently on low heat, heat a pan and add 1 tablespoon of oil. Add the ginger slices and stir-fry for about 2 minutes. Then add the chicken and stir-fry until the chicken pieces turn brown. Once done, turn off the heat.
5. Add the browned chicken pieces into the soup pot. Add the cooking wine, cover the pot with a lid, and continue to simmer for about 30 minutes. Just before taking it off the stove, add a little salt and taste for seasoning.
Just before serving the soup, add the spring onions and enjoy it while it's delicious.
