Ingredients
- 1 whole chicken
- 1 cup glutinous rice
- 1 ginseng root
- 8 cloves garlic
- 3 stalks spring onion (scallion)
- 2 dried jujubes (Chinese red dates)
- A little salt
- 1 spoon black pepper
- 2 spoons sesame seeds
- Water
- Sesame oil
Step-by-step instructions
(1) First, wash the whole chicken thoroughly and remove the innards and the small fat bumps on the chicken skin. Then soak the glutinous rice in water for about 1 hour. Likewise, wash and clean the ginseng root as well.
(2) Next, mix a little salt, black pepper, sesame seeds, and sesame oil together well in a bowl. Rub this seasoning mixture all over the inside of the chicken's belly, after the innards have been removed. Then drain the glutinous rice that was soaked earlier.
(3) Then put the drained rice into the chicken's belly. Next, also add the ginseng root, 2 dried jujubes, and 8 cloves of garlic into the chicken's belly. After that, let it rest in the refrigerator for about 15 minutes.
(4) While the chicken is resting, boil water in a pot. Once the water is boiling, put the whole chicken into the pot and cover it to simmer for about 30 minutes. When the time is up, add a little more water and continue simmering over low heat for another 40 minutes until the chicken and ginseng become soft and tender.
(5) Once the 40 minutes are up, you'll have your fragrant, hot and spicy Korean-style ginseng chicken soup that will instantly make you feel energetic and refreshed as soon as you drink the soup. Place it in a bowl of your choice, sprinkle a little black pepper and spring onion on top, and enjoy it deliciously.
