Ingredients

  • Noodles 220 grams
  • Chicken (or) pork (or) beef (or) prawns 220 grams (thinly sliced)
  • Cooking wine 2 teaspoons
  • Corn starch 1 teaspoon and salt 1 teaspoon
  • Chicken stock 60 milliliters

  • Light soy sauce 2 teaspoons and dark soy sauce 1 tablespoon
  • Sugar 1 tablespoon
  • Peanut oil 2 tablespoons
  • A small amount of mustard greens and 6 stalks of spring onion (thinly sliced)
  • Crushed ginger half a tablespoon

Step-by-step instructions

1. Soak the noodles in hot water for 5 to 7 minutes.

While the noodles are soaking, in a separate bowl, add the thinly sliced meat, cooking wine, corn starch, and half a teaspoon of salt, then mix well until evenly combined.

In another bowl, add the chicken stock, light soy sauce, dark soy sauce, sugar, and half a teaspoon of salt, then stir well until evenly combined.

2. Heat the pot and add oil. When the oil is hot, add the ginger. Add half of the spring onion and let it release its aroma into the oil.

3. Then add the meat and stir-fry well. Once the meat is cooked, add the mustard greens and the remaining half of the spring onion, and stir-fry for about 30 seconds.

4. Next, pour in the chicken stock sauce, mix well, then add the noodles. Fry until the chicken stock has mostly evaporated.

After tasting and adjusting the seasoning to your liking, your delicious fried noodles are ready.
