Ingredients

  • 1.5 lb beef (loin cut)
  • 5 tablespoons cornstarch
  • 4 tablespoons oil
  • 3/4 teaspoon salt
  • 1 tablespoon thinly sliced ginger

  • 4 tablespoons finely minced ginger
  • A small amount of chili oil (or chili powder)
  • 5 tablespoons fish sauce and 8 tablespoons water
  • 5 tablespoons brown sugar
  • 8 stalks spring onion (cut into about 2-inch lengths; use only the green part of the spring onion)

Step-by-step instructions

1. Slice the beef into pieces about 0.25 inch thick.

Cover the sliced beef pieces with plastic wrap and pound them flat using a meat mallet.

2. Put the flattened beef slices into a sealed bag, add the cornstarch, and massage until the beef is evenly coated with the cornstarch. Then let it sit for about 15 minutes.

3. Heat a wok and add the oil. Once the oil is hot, add the beef slices and fry for about 30 seconds. Then flip to the other side and fry for another 30 seconds. (If the wok is not large enough, fry the beef slices in 2 or 3 batches. Do not overcrowd and fry all at once.)

4. Transfer the fried beef slices to a plate and sprinkle a little salt over them.

5. Add the ginger and garlic to the wok and stir-fry in the oil for about 15 seconds. Then add the chili oil (or chili powder). Add the fish sauce, water, and brown sugar, stir well, and bring to a boil.

6. Once the sauce is boiling, add the fried beef, stir well, and let it simmer for about 30 seconds.

7. When the sauce has thickened, turn off the heat. Add the spring onions and stir-fry evenly.
