Ingredients

  • 3 tomatoes
  • 2 slices of ginger
  • 1 potato (peeled and cut into small cubes)
  • 1 carrot (peeled and cut into small cubes)
  • 2 stalks of Chinese coriander/celery (thinly sliced)

  • 1/2 onion (thinly sliced)
  • 2 liters of water
  • 2 mushrooms (remove the tough part and slice thinly)
  • 2 tablespoons of vegetable oil and 1 tablespoon of sesame oil
  • A little salt and ground pepper

Step-by-step instructions

1. Score the top surface of the tomatoes in a crisscross pattern. Then put water into a pot and bring it to a boil. Once the water is boiling, blanch the tomatoes for about 2 minutes.

2. Because of the scoring, the skin of the tomatoes can be peeled off easily. After peeling, cut into small cubes.

3. Heat a pot and add the vegetable oil. Add the ginger and tomatoes, and stir-fry for 3 to 5 minutes.

4. Next, add 2 liters of water and let it simmer for about 10 minutes. Add the potato, carrot, Chinese coriander, and onion, then let it simmer for another 10 minutes.

5. Once the potato and carrot have softened, add the mushrooms and continue simmering for about 3 more minutes. Add salt and ground pepper, and taste for a light, mild saltiness. Just before taking it off the stove, add 1 tablespoon of sesame oil and give it one final stir.

And there you have it — a delicious mixed vegetable soup! You can enjoy it deliciously together with rice.
