Ingredients
- 8 pieces of chicken thigh (bones and skin removed)
- A little salt and ground pepper
- 1 tablespoon olive oil
- 16 tablespoons orange juice (squeezed from about 3 to 4 oranges)
- 16 tablespoons chicken stock
- 8 tablespoons brown sugar
- 4 cloves garlic (thinly sliced)
- 1 small piece of ginger (thinly sliced)
- A little coriander and orange slices (for garnishing)
Step-by-step preparation
1. Rub the chicken evenly with salt and ground pepper.
2. Heat a pan and add 1 tablespoon of olive oil. Then add the chicken pieces and fry until they turn a light brown color. Make sure to fry both sides of the chicken pieces. Transfer the fried chicken to a plate.
3. In a small bowl, combine the orange juice, chicken stock, brown sugar, garlic, and ginger, and mix well. Then pour it into the pan and let it simmer until about one-third of the sauce remains.
At this point, preheat the oven to 350 degrees Fahrenheit.
4. Once done, return the fried chicken to the pan and mix well with the sauce. Then place the pan of chicken into the oven and bake for about 20 minutes.
Once the time is up, sprinkle a little coriander and garnish with orange slices.
