Step-by-step instructions
1. In a large bowl, gradually add the hot water to 342 grams of wheat flour and stir well until combined. Then add the cold water 1 tablespoon at a time and knead until it forms a dough ball.
2. Place the resulting dough ball on a cutting board and knead it with oil. Then put it back in the bowl, cover with a damp cloth, and let it rest for about 20 to 30 minutes.
3. In another bowl, combine the remaining wheat flour, salt, 3 tablespoons of peanut oil, and the scallions, and mix well.
4. After 20 minutes, divide the dough ball into 6 pieces. Flatten one piece out, then spread the earlier sauce mixture over it. Add the scallions and roll it up. Then coil it up like a wire spiral. Flatten it out with a rolling pin until flat. Then place it in a sealed bag and chill it in the refrigerator.
5. Heat a pan and add oil. Once the oil is hot, add the flattened dough roll and fry until golden brown on both sides.
And there you have it, a lovely scallion pancake.
For the half-fried egg filling, fry an egg half-fried, then sprinkle with scallions and cheese. Then place the fried egg on top of a pancake. Place another pancake on top of the fried egg.
