Ingredients
- 75 grams of fried peanuts
- 1 shallot (peeled and thinly sliced)
- 8 chili peppers
- 3 tablespoons of cooking oil
- 1 teaspoon of chili powder and 1 tablespoon of chili oil
- 150 grams of chicken
- A little salt
- 2 teaspoons of dark soy sauce and half a tablespoon of cooking wine
- 2 teaspoons of cornstarch
- 1 tablespoon of water
Ingredients needed for the sauce
- Half a tablespoon of dark soy sauce and 1 tablespoon of light soy sauce
- 1 teaspoon of salt
- A one-inch piece of ginger (thinly sliced)
- 2 cloves of garlic (thinly sliced) and 1 tablespoon of thinly sliced spring onion
- 2 teaspoons of cornstarch, 1 tablespoon of vinegar, 2 tablespoons of water, and 1 teaspoon of sugar
Step-by-step instructions
1. In a small bowl, mix all the ingredients needed for the sauce thoroughly.
2. Remove the skin and bones from the chicken and cut it into small cubes.
3. Put the chicken into a large bowl and mix thoroughly with salt, soy sauce, water, cooking wine, and cornstarch.
4. Heat the pot and add oil. Once the oil is hot, add the chicken pieces and fry for about 5 seconds.
4. Once the chicken pieces change color, push them to the side of the pot, leaving the center empty. Add the chili powder and chili pepper powder into the empty space and stir until fragrant. Add half of the sliced shallots, ginger, and garlic, and mix thoroughly.
5. Pour in the remaining half of the shallots and the sauce prepared in step (1) and stir-fry together with the chicken and all other ingredients until well combined. Add the peanuts last.
Once everything is well combined, remove from heat and transfer to a plate.
