Ingredients

  • 3 potatoes (peeled and cut into large chunks)
  • 1.2 kg boneless chicken
  • 6 shallots (thinly sliced)
  • 10 cloves garlic
  • 4 tablespoons vegetable oil

  • 3 tablespoons fermented soybean paste
  • 30 grams sugar
  • 1 tablespoon fish sauce (as seasoning)
  • 500 ml water (32 tablespoons)
  • A little coriander

Step-by-step Instructions

1. Heat a pot and add 4 tablespoons of vegetable oil. Once the oil is hot, add the shallots and garlic, and sauté for about 3 minutes.

2. Then add the fermented soybean paste and sugar, stirring for about 3-4 minutes until the sugar dissolves completely.

3. Next, add the chicken, potatoes, 1 tablespoon of fish sauce, and 500 ml of water. Stir well, then simmer over medium heat for about 15-20 minutes.

4. Once the potatoes are soft and the chicken is fully cooked, remove from heat. Transfer to a serving bowl and garnish with a little coriander.
