Are your little ones at home being picky with food, refusing this and that? I'd like to share a recipe for pork and potato stir-fry that's not only healthy and nutritious, but one your kids will enjoy without any fuss.
Ingredients
- 4 potatoes
- 2 cloves garlic (thinly sliced)
- 1 onion (thinly sliced)
- 1 teaspoon black pepper powder
- 2 teaspoons salt
- 3 pieces dried salted pork belly
- 4 eggs (optional)
Step-by-step instructions
1. Peel the potatoes and cut them into square cubes. Then put them in a pot, add water, and boil for about 5 minutes. Once done, drain the potato cubes into a bowl.
2. Cut the dried salted pork belly pieces into small 1cm cubes as well.
3. Heat a wok, add oil, and fry the potatoes and dried salted pork together. Once the meat and potatoes turn soft, add the garlic, onion, salt, and black pepper, and continue stir-frying. (If you'd like a fragrant aroma, you can also add some Vietnamese coriander leaves.)
4. After tasting and adjusting for a mild saltiness, transfer it to a plate.
5. Next, fry the eggs half-fried style. If you're not adding eggs, you can skip this step.
6. Place the half-fried egg on top of the pork and potato stir-fry.
