- 3 ripe bananas

Step-by-step instructions
1. Preheat the oven to 360°F. Line small cupcake molds with paper liners, or alternatively, grease them with coconut oil.
2. In a large bowl, mash the bananas with a fork until smooth.

4. In another bowl, combine the flour, salt, and baking soda, mixing evenly. Add this flour mixture into the banana bowl and stir until well combined.
5. If using walnuts, chop them slightly, then add them into the banana batter and mix evenly. (If not using walnuts, you can skip this step.)
6. Divide the batter evenly into the small cupcake molds. When filling them, don't fill them all the way to the top—fill only about two-thirds full. The remaining space should be left for the cake to rise.
7. Then place them in the oven and bake for about 25 minutes.
