Ingredients
- 2 lbs beef (cut into small square chunks)
- 8 oz tomato paste
- 1 tomato (cut into small chunks)
- 16 tablespoons beef broth
- 16 tablespoons coconut milk
- 3 tablespoons peanut butter
- 1/2 onion (thinly sliced)
- 5 cloves garlic (thinly sliced)
- 2 potatoes (peeled and cut into small square chunks)
- 1 red bell pepper and 1 green bell pepper (thinly sliced)
- 3 fresh green chilies
- 3 tablespoons cooking oil
- Salt and pepper, to taste
Step-by-step instructions
1. Heat the pot and add oil. Once the oil is hot, add the onion, garlic, and tomato, and stir until the tomatoes soften.
2. Then add the beef chunks and stir-fry until they turn brown.
3. Next, add the tomato sauce and beef broth. Cover the pot and simmer over low heat until the sauce reduces by about half.
4. Add the coconut milk. Add the green chilies and cover again. Continue simmering until the beef becomes tender.
5. Add the peanut butter and stir until well combined. Add the potato chunks, cover, and simmer for about 10 minutes.
6. Then add the bell peppers, cover, and simmer for about 12 minutes. After 12 minutes, add salt and pepper, and taste for seasoning.
