Ingredients
- 10 oz beef (thinly sliced)
- 1 tablespoon water
- 3 teaspoons vegetable oil
- 1/2 teaspoon cornstarch and 1/4 teaspoon baking soda
- 1 1/2 teaspoons soy sauce
- 3 slices ginger
- 2 cloves garlic (finely chopped)
- 2 stalks spring onion (white and green parts separated, thinly sliced)
- 2 teaspoons Shaoxing wine
- 12 tablespoons beef stock (or chicken stock)
- 2 tablespoons oyster sauce
- 1/2 teaspoon sesame oil
- A little sugar and white pepper powder
- 1 block tofu (cut into medium-sized pieces)
- Cornstarch slurry (mix 1 tablespoon cornstarch with 1 tablespoon water until smooth)
Step-by-step instructions
1. Mix the beef with the water, 1 tablespoon vegetable oil, 1/2 teaspoon cornstarch, baking soda, and 1/2 teaspoon soy sauce until well combined, then let it marinate for about 20 minutes.
2. Heat a wok and add 2 tablespoons of oil. Once the oil is hot, add the beef and sear each side for about 20 seconds. Once both sides are seared, transfer it back into the same bowl the beef was marinated in.
3. Add the ginger to the wok and cook in the oil for about 20 seconds. If more oil is needed, you can add another tablespoon. Then add the garlic and the white parts of the spring onion, and stir for about 10 seconds. After that, add the Shaoxing wine.
4. After stirring for about ten seconds, add the chicken stock, oyster sauce, soy sauce, sesame oil, white pepper powder, and sugar, and mix well. Then add the tofu and stir gently.
5. Once the sauce starts bubbling, pour in the beef along with the remaining spring onion. Be sure to pour in all the beef juices as well.
6. After a few seconds, pour in the cornstarch slurry and let it simmer until the sauce thickens.
Taste for seasoning, and if needed, you can add a little more soy sauce.
