For those who love soup, I'd like to share a recipe for carrot meatball soup.
Instead of adding the carrot in whole chunks, it's carefully mixed with flour and shaped to resemble minced meat patties, making it look unique and giving it a distinctly delicious flavor.
Ingredients
- 1 carrot
- 500 grams all-purpose flour
- 1 egg
- 1 tablespoon oil
- 1/2 teaspoon salt
- 100 milliliters water
- 2.5 liters pork broth
- A small amount of meatballs
- 4 eggs
- 6 shiitake mushrooms
- 1 tablespoon fried onion
- 1 tablespoon fried dried shrimp
- Chili peppers
Step-by-step instructions
1. Put the carrot into a food processor and grind until it becomes pulpy. Add the flour, 1 egg, oil, and salt, then grind again until well blended.
Transfer the resulting carrot-flour mixture into a large bowl and cover it with a damp cloth for about an hour. After an hour, tear the dough into small pieces.
2. In a small pot, bring the pork broth to a boil. Then add the small pieces of carrot-flour dough. Add the mushrooms and meatballs and let them cook. Then crack in the 4 eggs and continue simmering for about a minute.
3. Once everything is cooked through, you can remove it from the heat.
Just before serving, transfer it into a bowl and garnish with fried onions, fried dried shrimp, and chili rings, then enjoy it while it's delicious. Those who want to add vegetables can also include some watercress or sweet potato leaves.
