Ingredients

  • 2 oz dried shiitake mushrooms
  • 1 red chili (or any chili of your preference), cut into 4 pieces
  • 4 tablespoons cornstarch
  • Oil for frying
  • 1 tablespoon fish sauce

  • 1 tablespoon chili sauce
  • 1 tablespoon vinegar
  • 2 tablespoons honey
  • 2 tablespoons rice wine

Step-by-step instructions

1. Soak the dried mushrooms in water for about 2 hours beforehand.

2. Once the soaking time is complete, squeeze out the mushrooms until all the liquid drains out, then cut them into four pieces. Also cut the chilies into small pieces.

3. Put the prepared mushrooms into a bowl and coat them evenly with cornstarch.

4. To make the sweet and sour sauce, heat a small pot, then add fish sauce, chili sauce, vinegar, honey, and rice wine. Stir evenly and let it simmer for about 4 minutes until it starts bubbling.

5. Add oil to another pot. Once the oil is hot, add the mushrooms and fry for about 2 minutes until they turn golden brown.

6. Once everything is fried, take it out and place it on a plate. To make the mushrooms extra crispy, fry them again for about one more minute in hot oil.

7. Reheat the pot with the sweet and sour sauce, then add the fried mushrooms and chilies. Stir-fry evenly over medium heat.

Once everything is cooked, you'll have delicious crispy fried mushrooms coated in sweet and sour sauce ready to enjoy.
