Ingredients

For soaking inside the cake

  • 3 bowls of cherries
  • 1 tablespoon of sugar

  • 16 tablespoons of butter (equivalent to 8 tablespoons per stick of butter)
  • About 14 ounces of milk
  • About 8 ounces of cream cheese

For making the cake

  • 9 eggs
  • 1 bowl of sugar
  • 1 and a quarter bowls of flour

For topping the cake once done

  • About one and a third bowls of chocolate chips/pieces
  • 1 bowl of cream

Step-by-step instructions

Put the cherries into a large bowl, add rum and a tablespoon of sugar, and let it soak at room temperature for about an hour.

Once the hour is up, separate the cherries from the liquid.

Preheat the oven to 350°F. Separate the egg whites from the yolks. Add half of the bowl of sugar (not all of it) to the egg whites and beat with a mixer.

In a large bowl, mix the egg yolks with the remaining half of the sugar, stirring well.

In another bowl, mix together the flour, baking powder, and cornstarch. Pour about half of the beaten egg white mixture into the egg yolk mixture and stir again. Add the flour mixture little by little, stirring continuously. Once all the flour is added, pour in the remaining egg white mixture and stir again.

Pour the entire mixture into a round baking pan.

Bake it in the preheated oven for about 1 hour.

Once the hour is up, take it out of the oven, and while it's cooling down, prepare the filling for soaking into the cake. First, beat the cream with a mixer. Then add the cream cheese and beat again. Once it becomes thick, stop mixing.

Cut off about a quarter of the top of the cake.

Then remove the top piece and gently scoop out the inside with your hand to create a well shape.

Put the removed cake crumbs into a small bowl.

Then gently mix the cherries with the cake crumbs. (Set aside about four, five, or six cherries for decorating the cake.) Add the cream cheese mixture that was beaten earlier and mix well.

Put the mixed cherry-cake crumb mixture back into the cake.

Put the top piece back on and refrigerate it again.

Now let's prepare to finish and frost the cake. Melt the chocolate pieces together with the heavy cream for about 10 to 15 minutes.

After melting and letting it cool slightly, use a spoon to spread it over the top and sides of the cake.

As the final step, decorate the top of the cake with the cherries and sprinkle a little bit of chocolate shavings over it.
