Ingredients

  • Pork ribs 1 kilogram (cut into small pieces)
  • White radish 2 pieces (cut into medium-sized pieces)
  • Ginger 1 small piece (thinly sliced)
  • Garlic 4 cloves (thinly sliced)
  • Shallot 1 bulb (thinly sliced)
  • Dried chili 2 pieces
  • Star anise 3 flowers
  • Brown sugar a small amount
  • Clear soy sauce 4 tablespoons and dark soy sauce 1 teaspoon
  • Cooking wine 2 tablespoons
  • Ground pepper half a teaspoon
  • Salt a small amount
  • Water 48 tablespoons and a little oil

Step-by-step method

1. Rub the pork ribs with salt. Heat a pot and add half a tablespoon of oil. Then add the pork ribs and fry until they turn brown. Once done, transfer them to a plate.

2. Add another half tablespoon of oil into the same pot. Once the oil is hot, add the ginger, garlic, dried chili, and shallot, and stir-fry until fragrant.

Then put the pork ribs back into the pot. Add the brown sugar, clear soy sauce and dark soy sauce, cooking wine, and ground pepper. Then add water until the pork ribs are submerged, and simmer for about 2 hours.

3. Once the pork ribs have become tender, add the thinly sliced white radish and stir evenly. Stir until the white radish becomes tender.

4. Then taste for seasoning, adjusting for mild saltiness, and it's ready to take off the stove.

And there you have it — a delicious bowl of pork rib and white radish soup.
