Ingredients
- Chicken 750 grams (cut into 2-inch pieces)
- Ginger 60 grams (sliced thinly)
- Shallots 2 bulbs (sliced thinly)
- Cooking wine 1 tablespoon
- Sesame oil 1 tablespoon

- Dried Chinese mushrooms 30 grams (soak in 500 milliliters of water)
- Light soy sauce and dark soy sauce, 2 tablespoons each
- Sugar 1 teaspoon
- Vegetable oil 1 tablespoon
Step-by-step Instructions
1. Heat a pot and add 1 tablespoon each of vegetable oil and sesame oil, then heat until hot. Once the oil is hot, add the ginger and garlic and sauté for about 1 minute.
2. Next, add the chicken and fry for about 5 minutes.
3. Add the mushrooms, cooking wine, light soy sauce, dark soy sauce, and 1 teaspoon of sugar into the pot, and stir well until combined. Pour in the 500 milliliters of water used earlier to soak the mushrooms, cover the pot, and let it simmer for about 45 minutes. (You'll also need to open the lid occasionally and stir it from time to time.)
