Ingredients

  • Pork belly 500 grams
  • Spring onions 2 stalks
  • Ginger, one inch in diameter, 2 pieces
  • Sugar 1½ tablespoons
  • Oil 1 tablespoon

  • Cooking wine 2 tablespoons
  • Light soy sauce 1½ tablespoons and dark soy sauce 1 tablespoon
  • Star anise 1 piece
  • Water

Step-by-step preparation

1. Cut the pork into fairly large chunks. Fill a pot halfway with water and bring it to a boil. Then add the pork, one piece of ginger (thinly sliced), and 1 stalk of spring onion (cut into 2-inch lengths) into the pot and boil for about 5 minutes.

2. After five minutes, wash the pork pieces under running tap water, then pat dry with a clean cloth.

Strain the pork broth from earlier through a sieve and pour it into a large bowl.

3. Heat a wok without adding oil first, then add the oil and sugar. Once the sugar turns amber in color, add the pork pieces and fry each side for about 2 minutes.

4. Add the pork, soy sauce, 1 piece of ginger, 1 stalk of spring onion, cooking wine, star anise, and the pork broth into the pot.

5. Then cover the pot with a lid and simmer over low heat for about 1½ hours, or until the pork becomes tender and soft. Once the liquid starts to reduce, remove the lid, increase the heat slightly, and stir until the sauce thickens.

6. Once the sauce has reduced, transfer the pork into a serving dish. Garnish with spring onions.
