Ingredients

  • 1 bitter gourd (cut into medium-sized pieces)

  • 2 shallots (thinly sliced)
  • 2 chili peppers
  • Half a teaspoon of sugar
  • 1/4 teaspoon of dark soy sauce and 2 tablespoons of light soy sauce
  • 1 tablespoon oyster sauce
  • 2 tablespoons cooking wine
  • 1/4 teaspoon ground pepper

  • 800 grams pork ribs
  • 1 tablespoon oil and half a teaspoon sesame oil
  • 24 tablespoons water

Step-by-step preparation method

1. Chop the pork ribs into medium-sized pieces. Heat a pot and bring water to a boil. Once the water is boiling vigorously, add the pork ribs and boil for about 1 minute.

2. Heat a pan and add oil. Once the oil is hot, add the ginger, garlic, and shallots, and sauté until fragrant. Then add the chili peppers and stir-fry for about 1 minute.

3. Next, add the pork ribs and stir-fry for about 5 minutes. Then add the cooking wine, light soy sauce, dark soy sauce, oyster sauce, sugar, and ground pepper, and stir-fry for about 1 minute. Then add water and bring to a boil.

4. Once the soup is boiling and the pork ribs have become tender, add the bitter gourd and simmer for about 15 minutes.

When the time is up, taste and adjust the seasoning as needed, then remove from the heat.
