Hello everyone! This time, I'd like to share a recipe for a dish that contains a balanced mix of food groups.

It's a dish rich in protein from chicken, and cabbage and carrots, which are packed with vitamins and minerals and help prevent disease, cooked deliciously together.

Ingredients

  • 3 tablespoons olive oil
  • 1.5 lbs chicken (bones and skin removed)
  • 1 head of cabbage
  • 2 carrots (thinly sliced into strips)
  • 1 tablespoon paprika powder
  • 2 tablespoons tomato paste
  • 16 tablespoons chicken stock
  • Salt and pepper, to taste
  • 1 tablespoon soy sauce (optional)
  • A small amount of coriander

Step-by-step Instructions

1. Heat a pot, then add olive oil. Next, add the chicken and fry for about 5 to 7 minutes.

2. While the chicken is frying, thinly slice the cabbage.

3. Next, add the tomato paste and paprika powder into the pot with the chicken and stir well for about 5 minutes.

4. Add the cabbage and stir-fry for another 5 minutes or so.

5. Next, add the carrots, chicken stock, salt, and pepper, and let it simmer for about 40 minutes. Stir occasionally.

6. Once 40 minutes are up and there's no liquid left in the pot, you can take it off the stove.

For those who like it spicy, add a bit of chili and stir well.

And there you have it - a delicious chicken and cabbage stir-fry dish. Sprinkle a little coriander on top and enjoy it deliciously with rice.
