Ingredients

  • 1 tablespoon peanut oil
  • 1 shallot (thinly sliced)

  • 2 tablespoons cornstarch
  • 225 grams fresh peas

  • 450 grams beef (thinly sliced)
  • 1 teaspoon sesame oil
  • 5 eggs

Ingredients needed for the sauce

  • 500 ml chicken stock (or beef stock)
  • 2 tablespoons oyster sauce
  • 2 tablespoons cooking wine
  • 2 tablespoons light soy sauce and 1 teaspoon dark soy sauce
  • A pinch of ground black pepper

Step-by-step instructions

1. In a bowl, combine the chicken stock (or beef stock), oyster sauce, cooking wine, light soy sauce, dark soy sauce, and ground black pepper, and mix well.

2. Heat the pan and add oil. Once the oil is hot, add the beef and fry until it turns brown. Then add the garlic and ginger and fry for about 5 minutes.

3. Next, add the sauce prepared in step (1), stir, then cover the pot and let it sit for about 10 minutes.

Meanwhile, mix 2 tablespoons of cornstarch with 4 tablespoons of water until smooth.

6. Once the beef is cooked, add the fresh peas. Add the cornstarch-water mixture, stir well, and let it simmer until the liquid thickens.

7. Crack 5 eggs into the pan and fry them Half-Fried style. Once they're set, about 2 to 3 minutes, you can remove the pan from the stove.

Then, serve the sliced beef with fried eggs over a bowl of prepared rice and enjoy to your heart's content.
