Ingredients
- Chicken leg (or chicken breast) 8 oz
- Water 1 tablespoon
- Vegetable oil 1 teaspoon
- Fish sauce half a teaspoon
- Corn starch 1 teaspoon
- Bean sprouts 1 lb
- Spring onions 4 stalks (separate the white and green parts and slice thinly)
- Garlic 2 cloves (finely chopped)
- Mushrooms 5 pieces (sliced thinly)
- Vegetable oil 3 tablespoons
- Shaoxing wine 2 teaspoons
- Ground pepper and salt a little
- Sesame oil a little
- Corn starch 1 teaspoon (mixed with 2 teaspoons of water)
Step-by-step method
1. Mix the chicken with 1 tablespoon of water. Once the chicken has absorbed the water, mix it thoroughly with 1 teaspoon of oil, fish sauce, and corn starch. Then let it rest for about 20 minutes.
2. Wash the bean sprouts thoroughly with water until clean. Then heat a wok and add 2 tablespoons of oil. Once the oil is hot, add the chicken and stir-fry for about 1 minute. Then transfer it to a bowl.
3. Add another 1 tablespoon of oil to the wok. Once the oil is hot, stir-fry the mushrooms and spring onions (white part only) for about 10 seconds. After adding the garlic, add the bean sprouts and stir-fry. Then add the Shaoxing wine, oyster sauce, salt, sesame oil, and ground pepper, and stir-fry until well combined.
4. Once done, add the chicken back into the wok and stir-fry for about 10 seconds. Then add the corn starch mixed with water into the wok and stir-fry until well mixed, then continue stir-frying for another 15 seconds.
After tasting for seasoning, you will have a delicious Chicken Bean Sprout Stir-fry dish ready to enjoy.
