Ingredients

  • Dried wood ear mushroom and dried shiitake mushroom (about a handful)
  • 3 chicken drumsticks and 3 chicken wings

  • 1 tablespoon light soy sauce and 2 teaspoons dark soy sauce
  • 1.5 tablespoons corn starch and 1/2 teaspoon sesame oil

  • 1 teaspoon Shaoxing wine and 2 teaspoons oyster sauce
  • A little white pepper powder
  • 1/4 can of rice (condensed milk can measure) and 1 tablespoon oil
  • 250 ml chicken stock
  • 1 slice of ginger (thinly sliced into strips) and 1 stalk of scallion (thinly sliced)

Step-by-step method

1. Soak the dried shiitake mushrooms and dried wood ear mushrooms in water for about 1 hour.

2. Once the time is up, take them out of the water and mix well with the chicken, 1/2 teaspoon salt, sugar, light soy sauce, dark soy sauce, corn starch, sesame oil, Shaoxing wine, oyster sauce, and white pepper powder until evenly combined.

3. Wash the rice thoroughly with water, then put it into the claypot and mix well with the chicken stock, salt, and 1 tablespoon oil until evenly combined. Then add the previously marinated chicken and dried mushrooms on top of the rice and mix well again.

4. Add the ginger and scallion, cover the claypot with its lid, and cook over high heat for about 5 minutes. Then reduce the heat to the lowest setting and let it cook for another 25 minutes.

Once the time is up, you'll have a fragrant and delicious chicken claypot rice.
