We would like to share with cooking enthusiasts of MyFood Myanmar a recipe for twice-fried mushroom chicken, where the chicken is fried until crispy first, then fried again with mushroom sauce.
Ingredients
- 1 lb chicken breast (bones and skin removed)
- 3 tablespoons of wheat flour
- A little salt and black pepper
- 1 tablespoon of olive oil and 3 tablespoons of butter
- 8 oz mushrooms (thinly sliced)
- 1 shallot (thinly sliced)
- 2 cloves of garlic (thinly sliced)
- About 10 tablespoons of chicken broth and 10 tablespoons of cooking wine
- 10 tablespoons of Heavy Cream
- A little thyme and coriander leaves for fragrance (thinly sliced)
Step-by-step instructions
1. Cut the chicken breast in half through the middle. Then place it in a plastic bag and pound it flat with a heavy object.
2. In a sealed bag, shake the flour, salt, and black pepper together until well mixed. Then add the chicken pieces and shake again until evenly coated.
3. Heat a pan and add oil and 2 tablespoons of butter. Then add the flour-coated chicken pieces.
4. Once the chicken pieces turn golden brown, flip them to the other side and continue frying until golden brown as well. This will take about 5 to 6 minutes in total. Transfer the fried chicken to a plate.
5. Add the remaining 1 tablespoon of butter to the pan. Add the mushrooms and stir-fry for about 3 to 4 minutes.
6. Add the shallots, garlic, and salt, and stir-fry until well combined.
7. After about 1 to 2 minutes, add the chicken broth, wine, Heavy Cream, thyme, and a little salt and black pepper, and let it simmer until the sauce comes to a boil.
8. After simmering for about 10 to 15 minutes, the sauce will have thickened slightly. At that point, reduce the heat, add the fried chicken back into the pan, and stir for about 2 to 3 minutes.
Just before removing from the stove, sprinkle in the coriander leaves.
And there you have it - an extra delicious plate of twice-fried mushroom chicken is ready to serve.
