As the rainy season starts drizzling in, I'd like to share a recipe for a delicious chicken noodle soup that you can enjoy on a cool, rainy day.
Ingredients
- 300 grams chicken breast (cut into small pieces)
- 250 grams noodles
- Watercress or morning glory (sweet potato leaves)
- A small amount of sweet corn kernels
- 2 cloves of shallots (pounded)
- 4 boiled eggs
- A small amount of spring onion (thinly sliced)
- 1 tomato and 1 chili pepper (sliced into medium pieces)
- A small amount of salt and water
- 2 teaspoons cooking oil
Step-by-step Method
1. Pour oil into a pot and heat it up. Add garlic, spring onion, and chili pepper, and sauté until the oil is fragrant.
2. Add the chicken and fry it.
3. When the chicken is almost cooked, add the sweet corn kernels and fry together.
4. Once both the corn and chicken are cooked, add 720 milliliters of water and salt, and let it boil until it comes to a rolling boil.
5. While waiting for the water to boil, boil the noodles in another pot with water. Then, scoop out the boiled noodles and add them into the pot with the chicken.
6. Just before turning off the heat, add the watercress or morning glory leaves and let them cook.
After that, transfer it into a bowl, add the boiled eggs and spring onions on top, and it's ready to enjoy deliciously.
