Chicken is rich in protein, and this time we're sharing how to cook it deliciously with two kinds of peppers that contain absolutely no dye, for MyFood Myanmar's readers.
Ingredients
- 4 pieces of chicken breast
- 2 tablespoons of olive oil
- 4 tablespoons of vegetable stock or chicken stock
- 1/2 onion
- 2 cloves of garlic (thinly sliced)
- 12 oz of bell peppers (roasted)
- 8 tablespoons of coconut milk and a little cheese
- About a handful of spinach
- 1 teaspoon of chili powder
- 1/2 teaspoon of salt
Step-by-step Instructions
1. Finely chop the roasted bell peppers with a knife, or blend them in a blender until they become a paste.
2. Rub the chicken pieces with salt and chili powder.
3. Heat a pan and add 2 tablespoons of olive oil. Once the oil is hot, add the chicken pieces and fry for about 4-5 minutes. Then flip to the other side and continue frying for another 4-5 minutes. After that, remove the chicken pieces onto a plate.
4. Add the onion and garlic to the same pan and sauté until fragrant. Then add the vegetable stock or chicken stock and stir well. Simmer until the broth reduces.
5. Once done, add the pepper paste and simmer for about 7-10 minutes.
6. Then add the coconut milk, a little cheese, and spinach, and mix well.
7. Then put the fried chicken pieces back into the pan. Pour the sauce over the chicken pieces. Let it simmer for about 1 minute until the sauce starts to bubble.
Once all these steps are complete, you'll have a delicious pepper sauce chicken fry ready to enjoy.
