Let's fry up this mixed vegetable crispy chicken stir-fry.

Ingredients

  • 1 pound chicken (cut into small pieces)
  • 2 tablespoons oil
  • 1 tablespoon butter
  • 1/4 of a head of cauliflower (cut into medium pieces)
  • 1 carrot (thinly sliced lengthwise)

  • 8 oz mushrooms
  • 1/2 red bell pepper (thinly sliced)
  • 4 cloves garlic (thinly sliced)
  • 1 teaspoon thinly sliced ginger
  • 1 onion (thinly sliced)

To make the sauce

  • 125 ml chicken broth
  • 60 ml water
  • 60 ml soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice flour

Step-by-step instructions

1. In a bowl, mix and stir all 5 ingredients needed for the sauce together thoroughly.

2. Heat a wok, add 1 tablespoon of oil, and fry the chicken pieces. Once the chicken pieces turn golden brown, scoop them out separately onto a plate.

4. Add the remaining oil into the wok, then add the butter as well. Once the butter has melted, add the cauliflower, mushrooms, bell pepper, and carrot and stir-fry. Fry until the vegetables have softened.

5. Next, add the chicken back into the wok and stir-fry. Add the garlic and ginger and stir-fry for about one more minute.

6. Pour the sauce mixed earlier into the wok and let it simmer until it comes to a boil. Once the sauce has thickened, turn off the heat and let it continue to sit in the residual heat of the wok.

After that, garnish with spring onions and sesame seeds, and enjoy it deliciously with rice.
