Ingredients

  • Chicken breast 12 oz
  • Salt and ground pepper, a little
  • Corn starch 1 tablespoon
  • Egg white 1 piece
  • Watercress leaves 12 oz (cut into medium-sized pieces)

  • Vegetable oil 2 tablespoons and sesame oil 1 teaspoon
  • Garlic 2 cloves and ginger, about one inch in size
  • Rice wine 1 tablespoon and water (or chicken stock) 125 ml
  • Oyster sauce half a tablespoon
  • Corn starch 2 tablespoons (mixed well with 2 tablespoons of water)

Step-by-step instructions

1. Cut the chicken into medium-sized pieces. Then mix well with salt, ground pepper, corn starch, and egg white.

2. Wash the watercress leaves and cut them into medium-sized pieces. Slice the garlic thinly, and cut the ginger into thin strips.

3. Heat the pan, add 1 tablespoon of oil, and stir-fry the chicken for about one minute. Once the chicken loses its pink color, take it out onto a plate.

4. Heat the same pan again on high heat, then add 1 tablespoon of oil. Add the ginger and garlic, and sauté until fragrant. Add the rice wine and let it sit for about one minute. Then add the chicken stock or water. Add the oyster sauce and let it simmer for another 2 minutes.

5. Once the broth starts boiling, add the chicken and watercress leaves. Stir-fry for one to two minutes.

Taste for seasoning. Just before removing from the heat, add a little sesame oil and stir well.

Now you have a delicious Watercress Chicken Stir-fry dish ready!
