Ingredients

  • 1 tablespoon of peanut oil (or vegetable oil)
  • 450 grams of chicken drumstick (cut into bite-sized pieces)
  • 1 tablespoon of thinly sliced ginger
  • 2 tablespoons of rice wine
  • 1 liter of water

  • 8 oz sweet potato and 8 oz taro (peeled and cut into small square pieces)
  • 1 tablespoon of fish sauce
  • A pinch of salt
  • Half a green cauliflower (cut into bite-sized pieces)
  • 340 grams of chicken broth

Step-by-step instructions

1. Heat a pot and add oil. Once the oil is hot, add the chicken and let it sit for about 1 minute. Then flip the chicken pieces over and fry for another 1 minute.

2. Add the ginger and stir until fragrant.

3. Add the rice wine and stir frequently so the pot doesn't stick.

4. Next, add the water, sweet potato, taro, fish sauce, and salt, cover with a lid, and let it boil for about 15 minutes.

5. Once the taro and sweet potato have softened, add the green cauliflower and let it sit for about 1 minute.

6. Add the chicken broth and let it simmer for another 2 minutes.

Once the chicken broth has thickened, you'll have a delicious taro and chicken stew ready.

You can enjoy it deliciously together with rice.
