Let's make a delicious Chinese Sichuan-style salad with pig ears.
Ingredients
- 3 large pig ears
- 3 slices ginger
- 1 scallion
- A few Sichuan peppercorns
- 1 teaspoon salt
For the dressing
- 2 tablespoons Sichuan red chili oil
- 3 tablespoons chicken broth
- 1 teaspoon salt
- 1 teaspoon dark vinegar
- 1 teaspoon sugar
- 1 tablespoon fish sauce
- 1 teaspoon toasted sesame seeds
- 1 onion (thinly sliced)
- Coriander (thinly sliced)
Method
Boil the pig ears in a pot of water. Add the ginger, scallion, and Sichuan peppercorns, and boil the pig ears for about 20 minutes. Boil over high heat.
Remove the pig ears and let them cool. Slice the pig ears into thin strips along the cartilage. Place them in a bowl.
Put all the ingredients listed for the dressing into a bowl and mix well.
Pour the prepared dressing over the pig ears, mix well, and garnish with coriander.
If you want it spicier, you can add 1 tablespoon of chili oil mixed with 1 tablespoon of sesame oil.
