Ingredients
- Beef 1.3 kilograms (cut into chunks about 1.5 inches around)
- Cooking wine 4 tablespoons
- Dried chili pods 6 pods
- Ginger, thumb-sized 1 piece (sliced thinly)
- Spring onions 3 stalks (sliced thinly)
- Star anise 1 piece and cinnamon stick 1 piece
- Sugar 1 tablespoon, salt 1/2 teaspoon, and ground pepper 1/2 teaspoon
- Light soy sauce 1 tablespoon and dark soy sauce 1 tablespoon
- Carrots 3 pieces (cut into chunks about 2 inches around)
- Potatoes 2 pieces (cut into small chunks)
Step-by-step instructions
1. Put the beef chunks into a pot, add 1 liter of water, and bring to a boil over medium heat. Stir occasionally to prevent the beef from sticking to the pot. Skim off any foam or fat that rises to the top with a spoon.
2. After about 10 to 15 minutes, it should be boiling nicely. At this point, add the cooking wine, chili pods, ginger, spring onions, star anise, cinnamon stick, sugar, and ground pepper, then stir well. Cover the pot and simmer on low heat for about 40 minutes.
3. After 40 minutes, add the light soy sauce, dark soy sauce, and salt, then stir evenly. Then, leave uncovered and let it boil for about 1 to 1.5 hours.
4. Once the beef has become tender, add the carrots and potatoes and continue simmering for about 30 more minutes.
5. Once both the potatoes and carrots have softened, your delicious Potato and Beef Curry is ready to serve.
