Ingredients
- 2 cloves garlic (thinly sliced)
- About 1 tablespoon thinly sliced ginger
- A small amount of spring onion
- 3 tablespoons fish sauce
- A little water
- 2 tablespoons peanut oil
- About 1.5 pounds chicken breast (cut into medium-sized pieces)
- A small amount of mushrooms, carrots, and cashew nuts
- 1 teaspoon chili oil
- 1 tablespoon rice flour and 2 tablespoons water (mixed well)
Steps to make
In a large bowl, mix the chili oil, garlic, ginger, spring onion, fish sauce, and water together, and stir well until smooth.
Heat the pot and stir-fry the cashew nuts for about 1 minute. Then remove the cashew nuts and set them aside separately in a bowl.
Add 2 tablespoons of oil into the pot and fry the chicken pieces for about 5 to 6 minutes. Once the chicken turns a light brown color, remove it and set aside on a plate.
Add the thinly sliced mushrooms and carrots into the pot and stir-fry for about 3 minutes.
After 3 minutes, pour the fried chicken, cashew nuts, and the earlier mixed chili oil and spring onion mixture into the pot, and stir-fry for about 3 minutes.
Then add the rice flour and water mixture into the pot and stir until the sauce thickens. Once the sauce has thickened, you can remove it from the heat.
Once you transfer the finished chicken stir-fry onto a plate, you can enjoy this delicious Chinese-style chicken stir-fry dish to your heart's content.
