For those who say rice tastes better when there's soup, if you've been having the same old sour mustard soup, bottle gourd soup, or tamarind leaf soup over and over again, I want to share a new recipe to give you something fresh and different.
It's an egg drop soup that can deliver a naturally sweet flavor. Let's take a look at the recipe now.
Ingredients
- Chicken broth – 4 cups
- Spring onions – 3 stalks
- Ginger – 1 piece
- Chili powder – 1/4 teaspoon
- Salt – 1/4 teaspoon
- Corn starch – 4 teaspoons
- White pepper – 1/8 teaspoon
- Eggs – 4
- Sesame oil – 2 teaspoons
Method
1. Combine the chicken broth with the white part of the spring onions and the sliced ginger in a small pot, and boil over high heat until it comes to a rolling boil.
2. Once it's boiling, reduce the heat and let the soup simmer on low heat.
3. Mix the corn starch, chili powder, white pepper, salt, and 2 tablespoons of water together in a bowl. Stir well until the corn starch dissolves into a liquid.
4. Pour the resulting mixture into the soup, stirring well with a ladle.
5. To add the beaten eggs, hold a fork over the top of the bowl as shown in the picture, and slowly pour it into the pot.
6. After adding all the egg, wait a few seconds and then stir gently.
7. Drizzle with sesame oil, sprinkle some fresh spring onions on top, and it's ready to enjoy while hot.
