Ingredients

• 2 eggplants
• 11 long chili peppers (sliced thinly)
• 3 cloves garlic (crushed flat with a knife and then finely chopped)
• 1 bunch Chinese coriander (sliced thinly)
• 1 tablespoon vegetable oil

Ingredients needed to make the sour sauce

• 1 tablespoon light soy sauce
• 1 tablespoon sesame oil
• 2 teaspoons vinegar
• 1 teaspoon salt
• 3 tablespoons hot water

Step-by-step method

1. Cut off both ends of the eggplants, then cut into pieces about 8 centimeters long.

2. Next, put the eggplants into a steamer for about 15 minutes so that they become soft.

3. When the time is up, remove the eggplants from the steamer and let them cool.

4. Heat a pan and add 1 tablespoon of vegetable oil. When the oil is hot, add the chili peppers and fry for about 1 minute. Add the garlic and fry for another minute.

5. Transfer the resulting garlic chili oil into a sauce bowl. Then add the light soy sauce, sesame oil, vinegar, salt, and hot water into the same bowl and mix well until combined.

6. Pour the resulting sour sauce over the eggplants and let it soak for about 10 to 20 minutes so that the flavors soak into the eggplants.

When the time is up, sprinkle on some Chinese coriander and you can enjoy it deliciously with rice.
