Congee is a famous dish in China, and it is cooked and eaten with many different flavors.
That's why I want to share a recipe for the famous Sichuan style shrimp congee from China.
Ingredients
1 cup rice
2 liters water
10 small shrimp (peeled)
Finely sliced
Green leafy vegetables (e.g. Chinese cabbage, etc.) (half of 1 cup)
A little salt
1 inch ginger (pounded)
A little white pepper powder
Spring onion (for garnish)
1 tablespoon cooking wine
Half a teaspoon of oil
Method
In a single bowl, mix the shrimp with the pounded ginger, cooking wine, and white pepper powder, and let it marinate.
Soak the rice in water for about 30 minutes, then wash and drain it. In a small bowl, mix the rice with a little salt and oil, and let it sit for 10 minutes.
In a large pot, bring water to a boil and add the rice. Cook over low heat for about 40 minutes. Cook until the rice breaks down and the congee becomes thick.
Add the ginger and finely sliced vegetables, and continue cooking for about 1 minute.
Add the shrimp. When the shrimp turns red, turn off the heat and remove the pot of congee from the stove.
Garnish with spring onion and serve hot with pickled cucumber and other condiments.
