Step-by-step instructions
1. Wash the chicken thoroughly until the water runs clear. Then rub it evenly with 1 tablespoon light soy sauce, 1 teaspoon cooking wine, and half a teaspoon of salt.
2. Next, place the thinly sliced ginger and spring onion, cut lengthwise, on top of the chicken, and let it marinate for about 30 minutes.
3. After 30 minutes, place the chicken in a steaming pot and steam it for about 20 to 30 minutes. Once the chicken is cooked and tender, take it out of the pot and cut it into pieces of your preferred size. Then garnish with some shredded spring onion.
4. Next, you need to make the dipping sauce that goes well with the chicken.
Heat a pot. Add 1 tablespoon of sesame oil. Once the oil is hot, add the spring onion and garlic and stir-fry until fragrant. Then add the oyster sauce, light soy sauce, and water, and stir well. Once it comes to a boil, remove it from the heat and pour it into a bowl.
