Ingredients
- Fish 12 oz (cut into moderately sized pieces)
- Oil 750 ml
- Wheat flour 300 grams
- Baking powder 1/4 teaspoon
- Corn flour 1 tablespoon
- Salt 1/2 teaspoon
- Turmeric powder 1/4 teaspoon
- Chili powder 1/8 teaspoon
- Sesame oil 1/4 teaspoon
Ingredients needed to make the sweet and sour sauce
- Shallot 1/2 (diced into 1-inch cubes)
- Red and green bell peppers, 2 pieces (diced into 1-inch cubes)
- Ketchup 1 tablespoon
- Pineapple 1/4 piece (cut into small cubes) and a little pineapple juice
- Vinegar 2 1/2 tablespoons
- Water 60 ml
- Salt 1/4 teaspoon and sugar 2 tablespoons
- Corn flour 1 1/2 tablespoons
Method, step by step
1. In a large bowl, add the wheat flour, baking powder, corn flour, salt, turmeric powder, and chili powder, and mix well. Then add the oil and a little water, and mix until well combined.
2. Add the fish pieces into the resulting batter and mix well until evenly coated.
3. Heat a pot and add oil. Once the oil is hot, add the battered fish pieces and fry for about 4 minutes. When the fish turns golden brown, remove them and place them into a bowl.
4. In another pot, add 2 teaspoons of oil. Once the oil is hot, add the shallot and bell peppers and fry for about 30 seconds. Add the ketchup and stir for about 20 seconds. Then add the pineapple, pineapple juice, vinegar, 60 ml of water, salt, and sugar, and bring to a boil for about 2 minutes. Once the sauce is boiling, add the corn flour mixture and cook until the sauce thickens.
5. By the time the sauce is simmering, the fried fish will have softened. If so, re-fry it in hot oil for about 30 seconds. Add the crispy fried fish into the sauce pot and mix well.
After mixing for a few seconds, the sweet and sour fried fish is ready.
