1. Beat the eggs in a small bowl. Heat a wok, add half a tablespoon of oil, and once the oil is hot, pour in the eggs and fry. Slice the cooked egg into thin strips.
2. Put the fried egg into a large bowl. Then add the leeks, dried shrimp, salt, sesame oil, and light soy sauce, and mix well until evenly combined.
3. Put the wheat flour into a bowl. Pour in a little water and knead it in. Continue adding water little by little until all the flour is used up, kneading until it forms a smooth dough.
4. Roll the dough into a round log shape as shown in the picture. Then cut it into pieces about 2 inches long, roll each piece out into a circle, place the egg filling in the center, and roll it up as shown in the picture.
5. Heat a wok and add 2 tablespoons of oil. Once the oil is hot, add the rolls and fry them. Fry both sides of each roll. Once the rolls turn golden brown, remove them onto a plate.
