Ingredients
- 5 bowls of cooked rice
- 1 piece of chicken breast (or 2 pieces of chicken thigh), cut into small cubes
- 1 tablespoon soy sauce
- 3 tablespoons vegetable oil
- 4 stalks of spring onion, thinly sliced, with the white and green parts separated
- 4 cloves garlic, finely chopped
- 1 chili pepper, thinly sliced
- 7 mushrooms, cut into small pieces
- Half a bowl of boiled beans/peas
- 1 egg
Ingredients needed to make the sauce
- 3 tablespoons chicken stock
- 3 tablespoons fish sauce
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- A pinch of ground pepper and 1 teaspoon sugar
Step-by-step method
1. Mix the rice with 1 to 2 teaspoons of oil.
2. Marinate the chicken pieces with 1 tablespoon of soy sauce.
3. To make the sauce, mix the chicken stock, fish sauce, lime juice, ground pepper, and sugar together thoroughly in a small bowl.
4. Heat the wok and add 2 tablespoons of oil. Once the oil is hot, add the spring onion (white part), garlic, and chili, and stir-fry until fragrant.
5. After stir-frying for about 1 minute, add the chicken and fry for about 2 to 3 minutes.
6. Next, add the mushrooms and coriander, and fry for another 2 to 3 minutes. If it seems too dry, you can add a little more oil, or add 1 to 2 more tablespoons of chicken stock.
7. Next, add the rice and stir-fry thoroughly. Once done, slowly add the prepared sauce, about 1 to 2 tablespoons at a time, and fry for about 6 to 10 minutes.
8. Next, add the boiled beans/peas and stir-fry thoroughly, then push the rice to the side of the wok, leaving an empty space in the middle.
9. Crack the egg into that empty space.
After stir-frying over high heat for about 2 minutes, your delicious Thai-style chicken fried rice is ready to enjoy.
