The coffee pancake recipe is extremely simple and easy to make, and since the ingredients are just everyday kitchen staples, you won't need to go out of your way to shop for anything special.
If you, dear reader, enjoy drinking coffee, I believe you'll also love this sweet coffee pancake treat.
Ingredients
- Coffee powder - 2 tablespoons
- Lukewarm fresh milk - 250 ml (one cup)
- Flour - 160 grams
- Brown sugar - 1 tablespoon
- Salt - 1/4 teaspoon
- Baking powder - 2 1/2 teaspoons
- Butter - 3 tablespoons (melt 2 tablespoons of the butter into liquid form)
- Egg - 1
Step-by-step Method
1. Pour the coffee powder into the lukewarm milk and stir until fully dissolved. Then let the milk cool down.
2. In a large mixing bowl, combine the flour, baking powder, brown sugar, and salt, and mix well. Then add the cooled coffee-milk mixture, the egg, and 2 tablespoons of melted butter, and stir until the batter is smooth.
3. Heat a pan and add 1 tablespoon of butter. Once the butter has melted, scoop a small amount of the batter and pour it into the pan. Without covering, shape it into a round form and press it slightly so it spreads out.
4. Once the pancake has become firm and set, flip it to the other side and continue cooking. Repeat this process with the remaining batter as well.
Transfer the cooked pancakes onto a serving plate. Once all of them are cooked, you can enjoy them deliciously topped with syrup or butter.
