Ingredients

  • 8 tablespoons of wheat flour
  • 1 egg
  • 4 tablespoons of water
  • 1 teaspoon of baking powder
  • 1 tablespoon of olive oil

  • 2 corn cobs (kernels removed)
  • 1 bell pepper (seeds removed, cut into small square pieces)
  • 4 tablespoons of coriander and 4 tablespoons of spring onion
  • 1/2 teaspoon of salt and ground pepper
  • 3 to 4 tablespoons of olive oil

Step-by-step method

1. In a large mixing bowl, combine the wheat flour, baking powder, egg, and water, and stir until the batter thickens. Then add the olive oil, salt, and ground pepper, and mix again until well combined.

2. Into the resulting batter, add the corn, bell pepper, coriander, and spring onion, and mix again until well combined.

3. Heat a frying pan, then add about 3 to 4 tablespoons of olive oil. Once the oil is hot, scoop about 1 tablespoon of the corn batter and add it to the pan. Then flatten it out.

After about 3 to 4 minutes, once the corn fritter turns golden brown, flip it over to the other side and continue frying until it turns golden brown as well.

4. Once you've finished frying all of them, you'll have delicious, crispy corn fritters.

You can eat them hot right after frying, or store them in an airtight container to eat on later days.

If you store the airtight container in the refrigerator, it will keep for exactly 3 days. Just before eating, you can put it in the microwave and heat it for a few minutes.
