An hour or two after lunch, you often start feeling hungry again. If you don't feel like eating rice again but want to eat some kind of snack, try these tasty potato corn fritters.
Ingredients
- 2 potatoes (cut into medium-sized pieces)
- 1 onion (thinly sliced)
- A small amount of coriander leaves
- 1 tablespoon thinly sliced garlic
- 1 chili (thinly sliced)
- 150 grams corn kernels
- Half a teaspoon thinly sliced Chinese parsley (cilantro)
- 1 slice of cucumber, cut into quarters
- 125 grams yogurt
- Half a tablespoon chili powder
- 3 eggs
- 5 tablespoons wheat flour and 2 tablespoons corn flour
- Half a lime (thinly sliced into strips)
- 2 tablespoons water
- A small amount of salt and cooking oil
Step-by-step instructions
1. In a large bowl, mix together the potatoes, onion, coriander leaves, corn, garlic, chili, chili powder, wheat flour, corn flour, eggs, 2 tablespoons of water, and half a teaspoon of salt until well combined.
2. Heat a pot, add oil, and once the oil is hot, scoop about 1 tablespoon of the previously mixed potato batter and drop it into the hot oil to fry. After frying for about 3 to 5 minutes, the potato fritters will turn golden brown.
At that point, remove them from the pot and place them on paper towels to absorb the excess oil. Continue frying until all the batter is used up.
3. To make a dipping sauce to go with the fried potato fritters, we need to prepare a cream mixture. Cut the cucumber into small cubes. Then put it into a round bowl. Add the yogurt, Chinese parsley, and lime into that bowl and mix well until combined.
Then, enjoy the delicious potato corn fritters you fried earlier with the dip.
